Happy New Year, everyone!!!

Earlier, in preparation for the New Year, I gathered all my bakings books from all over the house in the hopes of gathering them in one place. I didn't realize I have accumulated quite a lot over the years.

Some were purchased years ago... little did I know I would really apply some of the techniques I learned from them. Some where purchased recently... It seems so nice to know that I could just grab some of the books and see that what I want to know is already there.

Cakes for Christmas

Red Velvet Cake

Merry Christmas!!!

Whew! If Jonny Depp is the new Mad Hatter, I was the Mad Baker. Two nights before Christmas, I baked a red velvet, coffe, chocolate and carrot cakes. Since I need to transport them to the venue, I just made the cake at home, then just brought my tools offsite.

Happy to announce that the people loved it! The cakes vanished 2 hours before Christmas! How I wished I baked more!!! Oh well, there's always the next Christmas.

Chocolate Chip Cookies

Sometimes, cupcake gurl gets tired of baking cupcakes, too.
I haven't made these in awhile. I was supposed to make an upside down cake as the fifth cake for Christmas but when I looked up recipes, it was supposed to be a cake served warm... since I have to transport the cakes, I don't think it would a good cake to serve. Good thing my sister suggested that I make cookies.

I made lousy cookies before... they're either undercooked, super hard or won't even hold their shape. This time (after two years) I think I finally got it. Ive read somewhere that the trick is to barely mix all the ingredients. The mis en place took longer than the actual mixing actually. The result... super chunky, chewy and yummy cookies.

I can't wait to bake this again soon!!!!

My first ever sugar cookies!!!

Tina's Dad's birthday is on Monday. She requested me to write a message on the cupcakes she ordered. Since the flourless chocolate cupcakes normally don't have a frosting, I can't write on top of the cupcake since it doesn't have a smooth surface.

Hhmmm... at first I thought of making white chocolate lollipops and write the message there instead. However, I still have doubts, there must be a nicer way of doing this. Melting and molding white chocolate ... it seems so easy... Why not make sugar cookie lollipops? This is a challenge I'd definitely welcome!

I don't have much experience baking cookies... but sugar cookies seem easy enough. It just has 4 ingredients... butter, sugar, egg, and flour. What could possibly go wrong? :)

I think it turned out perfectly fine. I baked enough for Tina's order and them some for taste testing and them some again as extra cookies for contingency and for me to play with. I still have a big glob of cookie dough resting in the fridge ready to be baked sometime.

The two extra cookies I got the chance to play around with.

Made a cake for Issa's Bridal Shower last Saturday.
Four layers of moist chocolate cake with bitterweet chocolate ganache.

Made flourless chocolate cupcakes to go with it. I'll post the pictures soon.
