Frostings 101: Basic Buttercream and Cream Cheese Frosting

Hi! How have you been? It's been a very busy of August and an even busier September! So now I am catching up writing Bake Happy's Frostings 101, are you ready? 

After the first frostings 101, I thought I'd share with you my basic recipe for buttercream and creamcheese frosting. It's a tweaked version of the Magnolia Bakery Buttercream recipe. I toned down on the sugar. 

Basic Buttercream

Here's what we need:
1 cup / 227 g / 2 sticks butter (straight from the ref) unsalted
454 g / 1 pound (sifted) icing sugar
Pinch of salt
1 tsp Vanilla extract 
1/8 cup of milk (or cream)

Here's how:
1. Cut up butter into small chunks.  

2. Beat until smooth, about 3 minutes.
3. Add sifted confectioner's sugar gradually.
4, At somepoint, the buttercream will look like bread crumbs but don't despair. Just add milk or cream and beat some more.
5. Lastly, add vanilla extract.
This buttercream recipe is the basis for my cream cheese frosting. It basically has the same ingredients with the addition of cream cheese.
The cup of butter is replaced with 1/2 butter and 1/2 cup cream cheese. Or if you want a more tangy frosting, use 1/4 cup butter and 3/4 cup cream cheese. 
Then, add vanilla, sugar and milk and beat until smooth.

WoW (White on White) Birthday Cake for Pammy

I made a White on White cake. Wanna see?
 This is for Pammy who celebrated her birthday last week.
 Pammy loves pink so I made "little Pammy's" dress pink.
I love making the little details. They make the biggest impact :)

How to Make the Angry Birds Cupcake Toppers

Hi Everyone!

Are you ready for a tutorial? I hope you are because I am! My friend Emely requested for an Angry Birds Tutorial and I am gladly obliging. My sister loves this game, I had her explain to me how it works (too bad, I'm not a gamer), it's pretty cool actually no wonder so many are hooked!
For this tutorial, I'll be showing you how to make the red Angry Bird. It's kind of the base for making the other birds. Once you know how to, you'd be able to make the other ones all on your own. Pinky swear.


What we'll need - 
Fondant in red, orange, black and white
Toothpick
Fondant ball tool
Rolling pin
Round fondant cutter
Water (to serve as glue)
Brush
Procedure:
1. Roll red fondant into a smooth ball.
2. Roll the white fondant flat and cut out round shapes.
3. Using water as glue, glue it at the bottom of the red bird.
4. Make small tear shaped fondant from the orange colored ones.
5. Using a toothpick, make a small hole into the middle of the bird's face, brush on a bit of water the insert the orange tear shaped fondant. This will be the red bird's beak.
6. Using the fondant ball tool, indent the bird's eve sockets.
7. Roll small pieces of white fondant and press into the eye sockets,
8. Shape small black fondant into a. tear shaped ones and b. round ones.
9. Glue tear shaped ones as the bird's eye brows and the round ones as its eyes.
10. Lastly, add some feathers (three tear shaped red fondant) into the top of the bird's head.
Here's the finished Angry Bird
Here are the birds' nemesis, the pigs! Boy they are cute!
Here's the whole gang! So who's playing Angry Birds now? I am!

A Picnic Birthday Cake for Autumn Danielle

Gotta love birthdays!
It means I have an excuse to go ahead and bake a cake and decorate it too!
Here's a birthday cake for a sweet little baby named Autumn Danielle - shown here held by her mama.
Gotta love their cheeks. I brushed them with a bit of pink luster dust.
 Here's the bottom of the cake, filled with flowers, bees and bugs :)
