Shhh.... I'm using my good old fashioned whisk while making this classic (read: I'm doing some late night baking and I'm hoping not to disturb my nice and friendly but already sleeping neighbors while I whisk the batter away.)
You see, it's bad enough that I torture them with the scent of freshly baked banana bread at an ungodly hour. And much more so if I use my trusty mixer to lull them to sleep (or in reality, wake them up to well... reality). So you see, I am a very considerate neighbor. So just in case you find a box of freshly baked Banana Bread by your doorstep tomorrow morning, you can be 100% sure I am just nearby and that is my peace offering for disturbing your much earned beauty sleep.I am nice that way.
Anyway, just in case you need some peace offering for some reason or another, I highly recommend that you make this banana bread. Warm, comforting and oh so familiar. Totally fits the "Just like how Mama used to Make" category... except that yeah... it does. At least for me, anyway. This recipe came from this magical old Merit Notebook.
Banana Bread
325 F / Makes one loaf
Ingredients:
1/2 cup butter
1 cup sugar
2 eggs
2 cups flour
3 tsp baking powder
1 tsp lemon juice
1 cup mashed bananas
Procedure:(1) Combine all dry ingredients. Set aside. Cream butter and sugar.
(2) Add eggs one at a time
(3) Whisk in dry ingredients
(4) Fold in lemon juice and mashed bananas
(5) Pour batter into a well greased loaf pan.
(7) Bake at 325F for one hour or until golden on the sides.
